Sassy molasses

I have to admit I have a small weakness for molasses cookies. Ok, so maybe it’s a big one. I could probably eat an entire batch all by myself if I don’t eat the cookie dough first. Ta-da, vegan molasses cookies. These sassy delights are such a delicious dessert. Soft and spicy. I absolutely love them. The folks at book club last night loved them too. They’re not super healthy but make for a great once-in-a-while treat and they smell heavenly while they bake. Thanks valgal123 for this awesome recipe!

 Vegan Molasses Cookies

  • 1 cup flour + 2 Tbs flour
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground clove
  • 1/8 tsp salt
  • 1/2 cup packed brown sugar
  • 6 Tbs vegetable oil
  • 2 Tbs molasses
  • 1/2 tsp vanilla extract
  • 2 Tbs unsweetened applesauce
  • course sugar for topping
  1. Preheat oven to 325 degrees F 
  2. In a mixing bowl, stir together flour, baking soda, cinnamon, ginger, clove and salt. 
  3. In a second bowl, mix brown sugar, vegetable oil, molasses, vanilla and apple sauce. 
  4. Add flour mixture to brown sugar mixture and stir until combined. Using a tablespoon measure, scoop up dough and form nice mounds. Place the mounds about 2 1/2 inches apart on an ungreased cookie sheet and lighty press down. Sprinkle tops with course sugar. (I actually waited until the last minute or two of baking before sprinkling the sugar on top.) Bake for 13-16 minutes. (12 minutes was perfect for me.) Let cool for 2 minutes on sheet and then transfer to wire rack to cool completely.
