A Sunday Smackerel

So today, a chilly but sunny Sunday afternoon, I would like to introduce you to my new favorite snack. Cranberry Macadamia Nut Squares. Well, I actually roll them into little balls instead of squares but they are so flippin delicious. I am a lover of macadamia nuts. Throw in some cranberries and this little lady is hooked. I’ve been keeping them in the fridge when I need a little afternoon snack or for when I find myself craving something sweet. They are super simple to make too. Double score! Cranberry Macadamia Nut Squares

Ingredients

1/4 cup raw cashews

1/2 cup raw macadamia nuts

1 Tbsp almond butter

1/2 cup quick cooking steel cut oats (I used regular oats)

1/4 cup unsweetened shredded coconut

1/2 tsp vanilla extract or powder

1/2 cup dried cranberries

2 Tbsp date paste (or about 10 dates, pitted)

dash cinnamon

pinch salt

Instructions

1. Make date paste by soaking 10 dates in water for about 10 minutes. Then pit the dates and throw into food processor with 2 Tbsp of water. Process until a paste forms. Add to the food processor the remaining ingredients and process until a dough-like consistency. Scrape the sides of the food processor as needed.

2. Make bars, squares or balls with the dough and store in the refrigerator up to one week. Makes about 10 squares.
