Another fantastic recipe coming at cha. This one is from ani’s raw food kitchen by Ani Phyo. I’m always looking for new things to add to the lunch menu and definitely the evening meal, so raw sun burgers seemed to be promising. These dehydrated circles of wholesomeness tasted great and were simple to make. Aside from giving myself time for the dehydrating process I barely spent 10 minutes on these little guys. Now in the book Ani suggests eating them with her wonderful sesame sunflower bread but I simply ate them as an accompaniment to my sautéed veggies. The meal was delightful. These sun burgers brightened my day. Get it? Brightened my day… sun burgers. Shine on, shine on.
2 stalks celery, chopped, about 3/4 cup
1/4 cup yellow onion, chopped
1/2 red bell peppers, chopped
1 tsp. sea salt
2 tsp. oregano, fresh or dried
1 cup sunflower seeds, ground
1/2 cup flax seeds, ground
1/2 cup water
To make burgers, place celery, onion, bell peppers, salt, oregano, sunflower seeds, and flax seeds in a bowl, adding water last. Mix well. Form four balls and flatten into burger patties.
You may want to dehydrate your burgers for 3 hours at 104° F before eating. Drying makes them a bit more firm, like a burger patty, as opposed to a pate.
